3-2-1 ribs using a smoker tube with a mix of hickory and apple wood chips… and it actually worked.

I always loved smoking with my Weber kettle but since we had a kid I’ve been unable to dedicate the time to it. So this weekend I figured I’d take a chance with a smoker tube on the gas grill and was absolutely blown away by the results.

    They look pretty tasty. A heat source is a heat source. I made a sous vide brisket yesterday and it was the best brisket I’ve ever had.

    The smoke box is the difference though, you’re getting real smoke into the meat. On a gas grill alone with no wood in a smoke box could still work, just wouldn’t have the same flavor.

    I started smoking on my gas grill – my gas supply is a hose from the house. I use a 1/4 stainless chafing pan – load up the soaked chips – run one burner under the pan on low. Throw a welding blanket over top – temp holds at about 230. For me it’s a winner.

    However, every time I drop by here – every single mother fucking time – there’s a bunch of supportive comments downvoted.

    It’s not even really that consistent. It just seems like there’s some fucking chud out there jerking off to ruining the community.

    All I have is a gas grill. I set one side to low and it holds perfectly at 250. Use a pellet tube and I have smoked quite a few things with zero disappointing results. No hate for the gas grill if you’re doing it right, it just doesn’t have the flexibility of a smoker.

    I’ve done it, without the 3-2-1 method. Worked most of the time. Now that I have a “real” smoker I can’t wait to try it again.

    Edit: I say “real” because it’s a pellet smoker and I know how that can upset some of the smoking purists here.

    I smoke on my gas grill too, but I use a cast iron full of charcoal and chips on one side and set my protein on the other, basically a makeshift offset smoker. Works like a charm plus you can turn on the burner under the cast iron to help maintain temps if needed.

    I do this lots when i can’t be bothered to clean the smoker.

    Little smoke generator on the gas grill, works just fine for a more casual smoke.

    I start my ribs on a weber smokey mountain and finish my ribs in foil on my gas weber.
